Baked Parmesan Basil Tomatoes

This recipe is an easy way to use the abundance of tomatoes and fresh herbs you may have in your garden (or soon may have).  Also, this a a great one that the kiddos can help make.  And because they have helped make them and they do make such a very pretty presentation, they are much more likely to help eat them, too!


Baked Basil & Parmesan Tomatoes
(serves 4)

  • 2 large, beef-steak type tomatoes cut horizontally OR 4 Roma tomatoes cut vertically
  • 1 t fresh basil (can also use oregano or rosemary)
  • 2-3 T grated Parmesan cheese
  • salt & pepper
  • olive oil
  1. Cut tomatoes and remove seeds.
  2. Place tomatoes on baking sheet, cut side up.
  3. Top with herbs, cheese, and a small pinch of salt & pepper.  Drizzle with olive oil.
  4. Bake in 450 degree oven until cheese is melted, about 10-15 minutes.
