Baked Basil & Parmesan Tomatoes
(serves 4)
- 2 large, beef-steak type tomatoes cut horizontally OR 4 Roma tomatoes cut vertically
- 1 t fresh basil (can also use oregano or rosemary)
- 2-3 T grated Parmesan cheese
- salt & pepper
- olive oil
- Cut tomatoes and remove seeds.
- Place tomatoes on baking sheet, cut side up.
- Top with herbs, cheese, and a small pinch of salt & pepper. Drizzle with olive oil.
- Bake in 450 degree oven until cheese is melted, about 10-15 minutes.
