This is another recipe that I've been meaning to share with you for a while. It's really easy to put together and a great way to re-purpose leftover beans, rice and Mexican shredded beef. If you are a really detailed person and like exact measurements, I'm sorry! But once you try it, you'll be glad you did!

Layered Fiesta Bake
- Mexican shredded beef
- Black or pinto beans
- Sour cream
- Brown rice
- Salsa
- Grated cheddar cheese
- Fresh, shredded lettuce
- Mix beans with some sour cream. Put mixture into a baking dish, spreading evenly across the bottom.
- Next layer: rice.
- Top rice with a small amount of salsa...or a lot of salsa...or somewhere in between
- Next layer: shredded beef.
- Top with grated cheddar cheese.
- Bake at 350 degrees for about 45 minutes or until cheese is beginning to brown and ingredients are heated through.
- Serve with shredded lettuce on top and extra salsa if you'd like.
