Layered Fiesta Bake

This is another recipe that I've been meaning to share with you for a while.  It's really easy to put together and a great way to re-purpose leftover beans, rice and Mexican shredded beef.  If you are a really detailed person and like exact measurements, I'm sorry!  But once you try it, you'll be glad you did!

Disclaimer:  This dish is faaaarrrrr yummier than the picture might indicate.  Just sayin'.


Layered Fiesta Bake
  1. Mix beans with some sour cream.  Put mixture into a baking dish, spreading evenly across the bottom.
  2. Next layer: rice.
  3. Top rice with a small amount of salsa...or a lot of salsa...or somewhere in between
  4. Next layer: shredded beef.
  5. Top with grated cheddar cheese.
  6. Bake at 350 degrees for about 45 minutes or until cheese is beginning to brown and ingredients are heated through.
  7. Serve with shredded lettuce on top and extra salsa if you'd like.
