Cider Glazed Pork Chops

This recipe is so good this time of year.  The warmth of the spices make this dish special enough for company but is easy enough to prepare for a weeknight dinnerServed with brown rice or mashed potatoes and your favorite steamed veggie, and dinner's ready.

Cider Glazed Pork Chops
  • 4 pasture-raised pork chops
  • 1 t olive oil
  • 2 T sucanat
  • 1/8 t cinnamon
  • 1/8 t nutmeg
  • salt & pepper
  • 2 T butter
  • 1 apple, cored and sliced
  1. Preheat oven to 350 degrees.
  2. Heat a large skillet over medium heat. Brush chops lightly with oil and place in hot pan. Cook for about 10 minutes, turning occasionally, or until nicely browned.
  3. Transfer to a baking dish.  Place apple slices on top.  Cover and place in oven.
  4. In a small bowl, combine sucanat, cinnamon, nutmeg, salt and pepper. Add butter to skillet, and stir in sucanat mixture.  Cook in uncovered skillet until thickened slightly.
  5. Spoon sauce over apples and chops.  Cover.  Continuing baking until chops are fork-tender, about 30-45 minutes.
