Cider Glazed Pork Chops
- 4 pasture-raised pork chops
- 1 t olive oil
- 2 T sucanat
- 1/8 t cinnamon
- 1/8 t nutmeg
- salt & pepper
- 2 T butter
- 1 apple, cored and sliced
- Preheat oven to 350 degrees.
- Heat a large skillet over medium heat. Brush chops lightly with oil and place in hot pan. Cook for about 10 minutes, turning occasionally, or until nicely browned.
- Transfer to a baking dish. Place apple slices on top. Cover and place in oven.
- In a small bowl, combine sucanat, cinnamon, nutmeg, salt and pepper. Add butter to skillet, and stir in sucanat mixture. Cook in uncovered skillet until thickened slightly.
- Spoon sauce over apples and chops. Cover. Continuing baking until chops are fork-tender, about 30-45 minutes.
