Frittatas are a great way to use up leftovers. Get creative! They are tasty, easy and can be made up ahead of time. Before we went camping recently, I mixed up all the ingredients, poured into a quart-size Ziploc bag and stuck in the freezer. Just thaw in the fridge before pouring into a greased pie plate.
Ham and Corn Frittata
Ham and Corn Frittata
- 8 eggs
- 1 cup grated cheddar cheese
- 1 cup frozen corn
- 1 C chunky salsa (I use my homemade version I'll share with you later but store-bought works fine, too!)
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ cup diced ham
- 1/3 cup milk
- Preheat oven to 375 degrees.
- In a bowl beat the eggs. Add remaining ingredients and stir well.
- Place into a greased pie pan.
- Bake for 40-45 minutes or until center is done.
