Ham & Corn Frittata

Frittatas are a great way to use up leftovers.  Get creative!  They are tasty, easy and can be made up ahead of time.  Before we went camping recently, I mixed up all the ingredients, poured into a quart-size Ziploc bag and stuck in the freezer.  Just thaw in the fridge before pouring into a greased pie plate.

Ham and Corn Frittata
  • 8 eggs
  • 1 cup grated cheddar cheese
  • 1 cup frozen corn
  • 1 C chunky salsa (I use my homemade version I'll share with you later but store-bought works fine, too!)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup diced ham
  • 1/3 cup milk
  1. Preheat oven to 375 degrees.
  2. In a bowl beat the eggs. Add remaining ingredients and stir well.
  3. Place into a greased pie pan.
  4. Bake for 40-45 minutes or until center is done.
